Why do guitar players try to play drums on their guitar when they get a MIDI guitar rig?

I have been taking this class on playing Pop Guitar. Apparently, playing pop guitar is all about layering. The instructor Massimo Varini suggests that you try to put every note in your layers...

So, if your progression is in C Major, you will play a C, D, E, F, G, A, and B in your layers. I'm hoping to layer some of the MIDI sounds to help with the layers.
